Evolution uses a "pseudo mbox" format. There is a directory created for every
mail folder you have. Under that are some index and control files, sub
directories for sub-folders, etc. There is a file called mbox in every
directory that is a standard file.

Your safest bet so far is just to back up the ~/Evolution directory to a CD.
That will be sure to work in Evolution. Eventually when you settle on a
distro and get it configured how you like, you can extract the mbox files
from the CD and put them into your preferred mail client.

I use my uni address on the list, and get a small amount of spam ( a few per
week). The thing is that the spam does not get delivered to adam.hawes
(which is just an alias to my real mailbox) - it's delivered to hawe0006 (the
real mailbox), so they aren't getting my address through this list or its
archives. They're getting it elsewhere.
