Patrick,
I know someone who about 10 years ago had been unemployed
for a couple of years. I recommended to him that he think of
a project (I gave him one in the area of text comprehension,
and he chose to create a scrabble program instead), and use
that to learn C. He did that, and soon got a so-so job,
and has moved successively through a range of better and better jobs.
My recommendation is not to worry so much about the OS.
Just get the kid to work on one absorbing programming project.
When you write software, you end up learning all the other stuff
you need in computers.
