Syslog remote logging

I wanted to setup a loghost to keep a centralized copy of all syslog
files for each server we have (about 20).  All the documents I have been
able to find so far online have been un-helpful.  Most refer to the
syslog.auth file for allowing the loghost to recieve updates from client
side machines, which doesnt seem to exist on the current version of
Syslog for RH6.2.  Instead I assume you should be able to set these
settings in the syslog.conf file, however im unsure what to set exactly.

What I would like to have is a local copy of all /var/log/* files on
each server, with a realtime copy sent to my remote logging host.  Could
someone please give me a few hints in setting up this system?  Or point
me to a good FAQ for syslog that explains these situations?
